One of my favorite comfort food is Fried Chicken. Not for the heaviness, but for the flavor!
I grew up with my Mom making he fried chicken this way, and I’ve never used any other recipe!
Mom’s Fried Chicken
1 whole chicken, cup into pieces
3 cups all purpose flour
Seasoning Salt
Oil for frying
(yep, that’s it!)
Cut off any cunks of flab or fat from the chicken and clean it well.
Sprinkle the chicken with seasoning salt, set aside.
Next, put your flour in a deep dish. Dredge the chicken in half of the flour, set in the refrigerator for about two hours.
[Suggestion-
If your making mashes potatoes, prep the water and peel dice the potatoes while the chicken is resting in the fridge.]
After two hours, remove the chicken and dredge it in fresh flour (I do this twice.)
Once the chicken is coated, start the oil.
Add about 1-1/2″ of oil in your frying pan or pot. I use a pot to keep rhe splatter down.
Heat it over medium high. You want a nice golden brown, but don’t cook it all the way. We will finish it in the oven.
Next to the frying pan/pot, you should have a baking dish with a flat wire roasting rack inside. This will help the chicken finish off without sitting in grease.
Now, preheat your oven to 350°f
Brown the chicken for about 3-4 minutes on each side, then place on the rack. Once all your chicken is browned, place in oven for 25 minutes.
This is when you should start your potatoes, or time yourself for what ever sides you may be having.
